Why do fats and oils store twice as much energy (and thus require twice as much energy to break down) as sugars and starches? By building models of lipids, students can visualize the molecular structures of the fats and illustrate the characteristic glycerol and fatty acid sub-units and the synthesis of triglycerides. They can also visualize the difference between unsaturated and saturated fats, and how these fats affect human body functions. The entire lab can be completed in 40 minutes.
